I was looking to reduce the dairy I consume, and found the only hard thing to give up was the cream or milk in my morning coffee. Almond or nut milks where just not cutting it. I came across a recipe from Erin Ireland discovering and making almond cream! A thicker, richer almond milk that makes a perfect alternative to coffee cream (it is also delicious on its own!)

Soak almonds (or nuts of choice) over night
Add 1 cup of almonds to blender
Add 1 cup (equal parts) water
Add 1tsp vanilla (either powder or liquid)
Add Sweetener of choice, I chose stevia because I enjoy my coffee without any insulin stimulation. You can use maple syrup also.
Blend for 1 minute
Strain through a cheese cloth, nut milking bag or old T-shirt.
Save the almond pulp for energy balls or a healthy addition to many recipes 🙂
