Refreshing Breakfast Muesli
Breakfast is one of those meals that often consists of grabbing something quick on the way out the door. As a result, the nutritional value of breakfasts can be sacrificed when there is little time to prepare something.
The recipe below is one of my favourite breakfasts, it is an adaption from the Joy of Cooking’s muesli recipe. It is a balanced meal which will provide you with good sources of protein, omega 3, fibre and healthy carbohydrates to start your day off right! Additionally, this recipe can be made ahead and stored in the refrigerator for up to three days – therefore making convenient breakfasts or snacks for a few days. You can easily double or triple the recipe to make a little more if you want the muesli to last for a few days. This principle of cooking multiple meals in one batch is very useful when cooking healthy meals as a busy person. Cooking once and eating twice (or more) is a great way to save time and keeping the dishes to a minimum, while providing yourself with multiple healthy meals that are there when you need them.
Although this recipe specifies specific amounts of ingredients, This recipe is very easily be tweaked or changed to your liking!
Swiss Muesli Recipe
2 cups rolled oats
2 cups boiling water
½ cup raisins
½ cup chopped dried apricots
1 cup almonds (or any nut/seed)
½ cup walnuts, flax seed, hemp seeds, or pecans
½ cup shredded unsweetened coconut*
2 apples, peeled and grated
*3 cups yogurt
Cinnamon to taste
In a large bowl, mix together the rolled oats, boiling water and salt. Let sit until oats soak up all the water. Stir in raisins, dried apricots, nuts, coconut and grated apples. Stir in yogurt and season to taste with cinnamon. Chill until you serve it. Tastes great with fresh sliced fruit and a sprinkle of maple syrup.
* 3 cups may vary depending on which type of yogurt you use, if you chose a greek yogurt, you may need more than three cups. Start by adding 3 cups, and then determine if the muesli is at a desirable consistency for you. Also, if you are planning to make this recipe and store it over a few days in the refrigerator, you may need to add some extra yogurt as the dried fruit and oats will continue to soak up moisture.
